Ingredients
For The Salad
50 gm diced English cucumber, 20 gm diced red pepper, 20 gm diced green pepper, 5 gm sliced black olives, 40 gm boiled quinoa, 30 gm mix lettuce, 70 gm firm ripe mango dices, 20 gm diced yellow peppers, 1 gm salt, 1 gm pepper, 1 gm oregano, 5 ml lemon juice, 3 ml olive oil
For Dressing
40 gm Veeba vinaigrette, 1 gm salt, 1 gm pepper, 3 gm fresh thyme, 5 ml lemon juice
Method
For The Salad
• Take a clean bowl; to it, add quinoa, diced peppers, cucumber and sliced black olives.
• Add mixed lettuce and toss with salt, pepper, lemon juice and also add little oil.
• Add firm ripe mangoes in the end.
• Do not toss the salad after adding mangoes.
• Season well.
For The Dressing
• Whisk vinaigrette with fine chopped fresh thyme.
• Add lemon juice and adjust the seasoning.
