Getting Corny

There’s nothing better than romancing the rain with the myriad flavours of corn. Dig into this sumptuous spread with corn recipes, simple enough to be prepared at home. Devour them to the rhythm of the rain.

Cheese Corn Tikki

Ingredients
· sweet corn, boiled and blended, 100 g
· Cheddar cheese, grated, 2 tbsp
· paneer, grated, 50 g
· cumin powder, 1 tbsp
· corn flour, 1 tbsp
· cardamom powder, ¼ tsp
· garam masala powder, ¼ tsp
· green chilies, 4 nos.
· coriander leaves, chopped, 1 tbsp
· salt to taste
· mint chutney, for garnish

Method

  1. Blend all the ingredients to make a thick, coarse mixture.
  2. Divide it into 8–10 portions and shape them into round tikkis.
  3. Heat oil in a kadhai and fry the tikkis till golden brown.
  4. Serve hot with mint chutney.

Corn Coriander Soup

Ingredients
· corn, boiled, ½ cup
· mixed vegetables, ½ cup
· water, ½ cup
· sugar, ½ tsp
· corn flour mix
· (2 tbsp corn flour mixed with 2 tbsp milk)
· black pepper, to taste
· salt to taste
· coriander leaves, for garnish

Method

  1. Mix the cooked corn, vegetables, sugar and water in a pan and boil.
  2. Then, add the remaining ingredients and let it thicken.
  3. Garnish with coriander leaves and serve hot.

Chickpeas and Corn Chaat

Ingredients
· corn, boiled, ¼ cup
· curd, thick, ¼ cup
· potatoes, boiled and diced, ¼ cup
· chickpeas, boiled, 1 cup
· chaat masala, 1 tsp
· red chilli powder, 1 tsp
· sweet chutney, 2 tbsp
· salt to taste
· coriander leaves, chopped, for garnish

Method

  1. In a bowl, toss all the ingredients well.
  2. Garnish with chopped coriander and serve.

Corn Rice

Ingredients
· corn, boiled, ½ cup
· baby corn, cut into pieces, 100 g
· rice, boiled, 200 g
· tomato, finely chopped, one
· onions, finely chopped, one
· capsicum, finely chopped, one
· biryani masala, 1 tbsp
· ginger-garlic paste, 1 tbsp
· butter, 4 tbsp
· green chillies, finely chopped, 4 nos.
· salt to taste

Method

  1. Heat butter in a pan and add the onions and ginger-garlic paste and sauté.
  2. Add the green chillies and baby corn and sauté again.
  3. Now, add the tomatoes and capsicum along with one-fourth cup water; wait until the baby corn gets cooked.
  4. Then, add the cooked rice, salt, biryani masala and boiled corn.
  5. Let it cook for five minutes on low heat.
  6. Once cooked, serve hot.

Corn Curd Curry

Ingredients
· sweet corn, boiled, 250 g
· onion paste, ¼ cup
· ginger-garlic paste, 1 tbsp
· asafoetida, 1 pinch
· cardamom powder, 1 pinch
· turmeric powder, 1 pinch
· cinnamon stick, one-inch
· cloves, 4 nos.
· big cardamom, one
· bay leaves, 2 nos.
· black pepper, 1 tsp
· garam masala powder, 1 tsp
· beaten curd, ½ cup
· oil, 2 tbsp
· salt to taste
· fresh cream, 2 tbsp, for garnish
· coriander leaves, chopped, for garnish

Method

  1. Fry the sweet corn in a pan; set aside.
  2. In the same oil, sauté the onion and ginger-garlic paste.
  3. Add the remaining ingredients
    (except curd and sweet corn) and sauté for five minutes.
  4. Then, add the corn and curd and cook it for some time to let it thicken.
  5. Garnish with fresh cream and chopped coriander and serve hot with rice or roti.

Baby Corn Subzi

Ingredients
· baby corn, boiled, 200 g
· onion, chopped finely, one
· tomato, chopped finely, one
· capsicum, finely chopped, one
· cumin powder, 1 tsp
· garam masala powder, 1 tsp
· red chilli powder, ½ tsp
· lime juice, ½ tsp
· oil, 2 tbsp
· salt to taste
· coriander leaves, finely chopped, for garnish

Method

  1. In a pan, heat oil and sauté the onions in it.
  2. Add the boiled corn and chopped capsicum and fry for a minute.
  3. Then, add tomatoes and sauté again.
  4. Add all the spice powders and adjust salt; let it cook well.
  5. Take it off the heat, and sprinkle lime juice on top.
  6. Garnish with coriander leaves and serve hot.

Corn Bhel

Ingredients
· sweet corn, boiled, 200 g
· onions, finely chopped, 2 nos.
· tomatoes, finely chopped, 2 nos.
· potatoes, boiled, peeled and diced, 2 nos.
· capsicum, finely chopped, one
· paneer, cut into small squares, ½ cup
· chaat masala, 2 tsp
· red chilli powder, 1 tsp
· lime juice, 1 tbsp
· salt to taste
· coriander leaves, finely chopped, for garnish
· flat puris, broken into pieces, for garnish
· fine sev, 2 tbsp, for garnish

Method

  1. Mix all the ingredients in a bowl and toss well.
  2. Garnish with coriander leaves, broken puris and sev and serve.
