INGREDIENTS
For the chocolate sponge, 20 eggs, 660 g sugar, 660 g dark chocolate, 660 g butter, 550 g flour, 2 tbsp baking powder
For the chocolate ganache
400 ml heavy cream, 200 g dark chocolate
METHOD
• Beat the eggs and sugar till the mixture raises a little.
• Melt the chocolate and butter together. Keep the mixture aside
• Add the melted chocolate and butter in the beaten egg mixture. Mix slowly and carefully.
• Then add the flour and baking powder to the batter.
• Bake at 180°C for 30 minutes. Your chocolate sponge is ready. Keep aside.
• To prepare the chocolate ganache, boil the cream and add dark chocolate to it. Mix well till the chocolate gets dissolved. Remove from heat and allow it to cool.
• Cut the prepared chocolate sponge into three parts, layer each part with the chocolate ganache and then finally top it with a coat of ganache.
