कांचीपुरम इडली (kanchipuram idli)

सामग्री: 1 कप कच्चा चावल, 1 कप चावल (पका हुआ), 1 कप उड़द दाल, नमक स्वादानुसार, 1 टीस्पून कालीमिर्च (दरदरी पिसी हुई), 1 टीस्पून जीरा, चुटकीभर सोंठ पाउडर, थोड़ा-सा काजू.

विधि: कच्चा चावल, पका हुआ चावल और उड़द दाल को मिलाकर 1 घंटे तक भिगोकर रखें. मिक्सर में दरदरा पीसकर गाढ़ा घोल बनाएं. इस घोल में थोड़ा नमक मिलाकर 7-8 घंटे तक ढंककर रखें. पैन में तेल गरम करके जीरा का छौंक लगाएं. कालीमिर्च पाउडर और सोंठ पाउडर डालकर 1 मिनट भून लें. आंच से उतारकर इस छौंक और काजू को घोल में मिलाकर अच्छी तरह मिक्स करें. चिकनाई लगे इडली मोल्ड में डालकर 10-12 मिनट तक स्टीम में पकाएं. नारियल की चटनी और सांबर के साथ सर्व करें.
