Mangodi Sabzi
रोज़-रोज़ के बोरिंग लंच या मेनकोर्स से बोर हो गए हैं और कुछ नया ज़ायका ट्राई करना चाहते हैं, तो यह बेस्ट रेसिपी (Methi-Mangodi). आप चाहें तो इसे त्योहारों या पार्टी के अवसर पर भी बना सकते हैं. यह रेसिपी राजस्थान की लोकप्रिय रेसिपी है, जो बनाने में बेहद आसान है.
सामग्री:
- 1 गड्डी मेथी (कटी हुई)
- आधा कप मंगोड़ी (रेडीमेड)
- 2 टेबलस्पून तेल
- 1-1 टीस्पून मिक्स साबूत गरम मसाला और लाल मिर्च पाउडर
- 1-1 प्याज़ और 2 टीस्पून लहसुन (दोनों बारीक़कटे हुए)
- 2 टीस्पून धनिया पाउडर
- 1/4 टीस्पून हल्दी पाउडर
- पानी आवश्यकतानुसार
- आधा टेबलस्पून शक्कर
- नमक स्वादानुसार

विधि:
- मंगोड़ी के छोटे-छोटे टुकड़े करके गरम तेल में सुनहरा होने तक तल लें.
- बचे हुए तेल में साबूत गरम मसाले डालकर भून लें.
- प्याज़ और लहसुन डालकर सुनहरा होने भून लें.
- सारे पाउडर मसाले मिलाकर मसाले के तेल छोड़ने तक भून लें.
- तली हुई मंगोड़ी, नमक, शक्कर और आधा कप पानी डालकर उबाल लें.
- मेथी डालकर धीमी आंच पर ढंककर 3-4 मिनट तक पकाएं.
- चपाती के साथ सर्व करेें.
नोट:
- मेथी को मंगोड़ी करी में डालने के बाद ज़्यादा देर तक न पकाएं.
