INGREDIENTS
3 nos. whole corn, 1 tbsp chopped tomato, 1 tbsp chopped onion, 1 tbsp chopped green pepper, 1 tbsp sliced jalapeno, 1 tbsp tomato purée, 1 tsp chopped garlic, 1 tsp olive oil, Salt to taste, 150 gm grated cheese, 1 tsp chopped parsley
METHOD
• Sauté onion and garlic in a pan with olive oil.
• Add tomato, parsley, tomato purée, jalapeno and pepper.
• Mix it together in a bowl and season with salt.
• Char the corn in a grill or open fire. Grate some cheese on top for it to melt.
• Serve with salsa and lime wedges on the side.
