INGREDIENTS
1 thinly sliced lemon, 1½ cups superfine sugar, 3 cups cold water, 1¼ cups lemon juice, 1 slit green chilly (optional, for extra spice), 4 cups ice, Mint leaves for garnish
METHOD
• Combine 1 thinly sliced lemon and 1½ cups superfine sugar in a bowl; mash with a spoon. Add 3 cups cold water and 1¼ cups lemon juice; let stand for 5 minutes, stirring occasionally. Strain. Puree half of lemon juice mixture and 4 cups ice in a blender until smooth.
• Pour into 4 chilled glasses; repeat.
• Add the slit chilly to the glass if you want to make it spicy.
• Pour it in a tall glass or a mason jar and serve immediately.
