INGREDIENTS
1 cup lychee fruit, ½ cup red syrup (grenadine), ½ cup cold water, ½ lime juice, Club soda, Mint (to garnish)
METHOD
• Purée the lychee fruit and add water until a smooth consistency is reached.
• Strain the mixture into a pitcher, and discard the pulp.
• Add lime juice and red syrup and stir well.
• Pour into glasses filled with ice cubes until ¾ full.
• Top the rest off with club soda.
• Garnish with mint and serve.
