सूजी-आलू कचौरी

सामग्री: कवरिंग के लिए: 150 ग्राम बारीक़ सूजी, 50 ग्राम मैदा, 2 टेबलस्पून घी (मोयन के लिए), गूंधने के लिए दूध आवश्यकतानुसार.

स्टफिंग के लिए: 1 कप आलू (उबले व मैश किए हुए), 1-1 टीस्पून लाल मिर्च पाउडर, चाट मसाला, और धनिया-जीरा पाउडर, आधा टीस्पून सौंफ पाउडर, 1 टेबलस्पून हरा धनिया कटा हुआ, नमक स्वादानुसार.

विधि: कवरिंग की सामग्री को मिक्स करके गूंध लें. 15 मिनट तक कपड़े से ढंककर रखें. स्टफिंग की सारी सामग्री मिक्स कर लें. गूंधे हुए आटे की लोई लेकर छोटी-छोटी पूरियां बेलकर स्टफिंग की सामग्री भरें. अच्छी तरह बंद करके कचौरी का शेप दें और गरम तेल में सुनहरा होने तक तल लें. खट्टी-मीठी चटनी के साथ सर्व करें.
